Growing up near the banks of the Red River in Alexandria, Louisiana, chef Bobby Bouyer learned a thing or two about traditional Creole cooking. He brings that Crescent City flavor to New Orleans-themed Storyville. The Big Easy Gator Meatball starter is his take on meatballs marinara. Fresh alligator tail meat is mixed with seasoned ground pork, which adds a fatty and flavorful element to the leanness of the gator.

Sicilians marked their spot in the history of sandwiches in 1906 when Central Grocery’s Salvatore Lupo stuffed a round muffuletta bread with cold cuts, cheese and a flavorful olive relish and started selling it to blue-collar deliverymen stocking the French Market district. A chat with chef Bobby Bouyer is like a stroll down Bourbon Street in New Orleans’ French Quarter. In his faded Cajun accent and with warmth in his voice, he described the simple joys of cooking tangy molasses-smoked barbeque and tender slow-roasted brisket. Louisiana-style cooking is rustic and focuses on seasoning in layers and understanding the nuances of the ingredients. Then again a lot of other cuisines are like that too. But in the South it’s the hospitality that forms the foundation of any authentic dining experience.

When Joan Gallo, who has lived in Mineola for 17 years, noticed that the space was available, she decided it would be perfect for her style of hearty, down-home Southern food. She and her business partner, Thomas Sullivan, also own the 15-year-old Delta Grill in Manhattan; Bobby Bouyer is their chef in Mineola.
