
A Winter Feast: Jambalaya
Jambalaya is a true roller coaster of flavors. A combination of textures, colors, and flavors wrapped up in one dish. Jambalaya stemmed from Paella (traditional Spanish rice dish) by the Acadians who settled in south east Louisiana. The Acadians took the Paella and reinvented it to utilize regional ingredients using a spicy pork sausage called Andouille, seafood from the Bayou (crab, shrimp, and oysters).
